Hello my fellow Galbani Pro Team members,

I’ve done a ton of competing in the states, and internationally. More than a few times. After the first year, I started making a list of things to do, things to bring, and just some general notes to avoid silly mistakes. To the new people competing: huzzah! You’ve decided to toss your hat in the ring, and try competing. It’s a freaking ride, and the opportunity to meet new people, doing very similar things to what you’re doing, not to mention the actual competing that makes you a better pizza maker—it’s just a thrill. Pizza, and pizza competitions have done more for me, than anything else in my life. I have met lots of great people, numerous OK people, and a few jerks. What I’ve taken away from just watching and being present is far greater than the time and cost to get there.

Below is my list of sorts that I gave to Galbani to share with my fellow competing Teammates.

Sean Dempsey is a multiple award-wining Pizzaiolo, long-time competitor, member of the US Pizza Team and Galbani Pro Team, owner of Danger von Dempsey’s Pizzeria and Dempsey’s Brewery in Aberdeen and Watertown, SD.  Known for unique pies, and a sunny disposition, if you’ve ever competed in any pizza contest in the past 10 years, you’ve probably seen him. He is always looking to elevate the craft, and to help others do the same.
